Paleo Mexican Shrimp Stir Fry

This paleo and keto-friendly shrimp stir fry is packed with flavor, nutrients, AND it's done in under 30 minutes! This is a perfect meal to meal prep for the week or to have on a busy weeknight. This recipe was created by our friend, Melissa over at Melissa’s Healthy Kitchen!

INGREDIENTS

  • 1 lb wild-caught shrimp
  • 1 Tbsp Fourth and Heart California garlic ghee
  • 1/2 Tbsp Primal Palate meat and potato seasoning
  • 2 cups riced cauliflower
  • 2 red bell peppers, chopped
  • 2 yellow bell peppers, chopped
  • 1/3 cup onions, diced
  • 1/2 cup cilantro, diced
  • Salt and pepper to taste
  • ¼ cup Bonafide Provisions Chicken Broth or Bonafide provisions chicken bone broth 

DIRECTIONS

  1. Heat your ghee in a large stainless steel pan over medium-high heat
  2. Season shrimp with salt and pepper and cook for 2 minutes on each side
  3. Transfer shrimp to a dish, and set aside
  4. Add your onions, bell peppers, and a little bit more ghee and sauté for 5-8 minutes or until nice and caramelized
  5. Add your meat and potato seasoning, cauliflower rice, and bone broth. Mix until well combined and cook for additional 2-4 minutes
  6. Remove from heat and add the cilantro and cooked shrimp, stir until well combined.
